Sweet Potato Latte
Move over pumpkin, there’s a new HOT drink in town! With sweet potato and anti-inflammatory spices, you can taste (and feel!) the healing benefits with each delicious sip. Fill up a mug with this vibrant latte to warm your heart and soothe your soul!
* Serves 1
1¼ cups almond milk (coconut and cashew milk work well, too!)
3 tablespoons cooked sweet potato, skin removed
¼ teaspoon cinnamon
1 teaspoon grated fresh ginger root (or ¼ teaspoon dried)
2 teaspoons coconut oil (for maximum nutrient absorption)
¼ teaspoon vanilla
2 teaspoons maple syrup (or sweetener of choice to taste)
NOTE: Add one date during the blending process in place of the maple syrup
VARIATION: experiment with other spices including turmeric, cloves, nutmeg, and allspice.
Blend the cooked sweet potato with nut milk in a blender until smooth. Add in the cinnamon and ginger (or other spices) and give it another whirl. Pour the mixture into a pot and gently heat, making sure not to boil. Once heated through, mix in the coconut oil and whisk. To finish, sweeten with a drop of vanilla and maple syrup. Pour into a mug and top with additional cinnamon.
