Strawberry Shortcake Smoothie
Filled to the brim with antioxidants, a megadose of vitamin C, and flavor, one serving includes a delicious boost of nutrients reminiscent of a sweet + satisfying dessert. This smoothie is energizing first thing in the morning to kickstart a busy day or as a mid-afternoon pick-me-up. This recipe is a family fave!
1 cup DIY cashew milk (coconut milk works too)
2 tablespoons raw cashews (soaked for about 30 minutes)
1 ¼ cups frozen strawberries (or use any berry combination)
½ banana, sliced & frozen
½ cup frozen cauliflower (optional for added nutrients and creaminess)
½ teaspoon vanilla
1 teaspoon lemon zest (don’t skip this!)
Pinch of sea salt
NOTE: to make a smoothie bowl with toppings use a little less liquid for a thicker consistency.
Blend the cashews and the cashew milk in a high speed blender until smooth. Add in remaining ingredients and blend until a creamy consistency is reached. Add in additional nut milk if necessary. Enjoy the pretty in pink smoothie!
