Maple Crunch Granola
Homemade granola makes a quick breakfast, snack, or pick me! Filled with heart healthy nuts, fiber from the oats, and bursting with flavor! When preparing baked goods, it is usually important to use an exact amount of each ingredient, but this recipe is forgiving! Feel free to mix & match with different combinations of nuts, fruits, and flavors to create a unique variety each time.
3 cups organic old-fashioned oats (gluten free if necessary)
2 cups nuts & seeds (walnuts, sliced almonds, pecans, pistachios, sunflower seeds, pumpkin seeds)
¼ cup coconut sugar (important for crunch!)
½ cup unsulphured shredded coconut
2 teaspoons cinnamon
1 teaspoon sea salt
⅓ cup maple syrup
¼ cup coconut oil, melted (olive oil works too)
1-2 teaspoons pure vanilla extract
1 cup or more of unsweetened and unsulfured dried fruit (goji berries, golden berries, cranberries, blueberries, chopped apricots, dried cherries)
Optional Omega Rich Boost
Sprinkle with hemp, chia and flax seeds while granola is cooling
Preheat the oven to 325 degrees. Put oats, coconut, cinnamon, salt, coconut sugar and nuts in a big bowl. Pour maple syrup, pure vanilla extract and melted coconut oil over all the ingredients. Coat evenly by mixing with a spoon. Spread the mixture onto two parchment lined baking sheets. Bake in the oven for 35 minutes, stirring after 20 minutes. Since ovens may vary, check often as granola can burn VERY easily. Once evenly browned (about 35 minutes total baking time), remove from the oven. Let cool completely. If desired, add the dried fruit and optional omega rich boosts. Mix well. Enjoy on top of yogurt, cereal, smoothie bowl, or by the handful!
NOTE: For granola clusters, do not mix at the halfway point. Just lightly shake the tray.
