Lavender Chia Pudding
Eat your way CALM! The magical powers of lavender mix with mood-boosting chia seeds for a healing pudding to soothe your body AND ease your mind. Make this in advance to enjoy as breakfast, midday snack, or satisfying dessert.
1¼ cups plant-based milk (almond, cashew, hemp, coconut)
1 tablespoon culinary lavender
¼ cup chia seeds
1½ tablespoons pure maple syrup
½ teaspoon pure vanilla extract
1 teaspoon lemon zest (optional)
pinch of sea salt
Add nut milk to a small pot and heat until warmed through. Turn off the heat and add the culinary lavender to the pot. Cover and let steep for 15 minutes. Pour the liquid through a fine mesh strainer. Add the nut milk, vanilla, sea salt, maple syrup, and chia seeds to a jar. (Optional: toss in 1 teaspoon lemon zest) Allow to sit for 20 minutes whisking every few minutes until mixture thickens. Place the pudding in the refrigerator and store for several hours or overnight. Check for desired thickness and flavor. Adjust if needed. When ready to serve, spoon into bowls and top with fresh berries.
Store in refrigerator for up to 4 days.
