Healthy Fudgy Grain-Free Brownies
Chocoholics rejoice! These delicious & decadent brownies have all the flavors of this classic dessert without any refined sugars, dairy, flour or eggs. Perfect for satisfying any chocolate or sweet cravings while nourishing your body with wholesome foods at the same time. Serve with coconut whipped cream and berries. Enjoy!
*Makes 24 brownies
Coconut oil for greasing pan
2 cups nut butter (almond, cashew or peanut butter work great)
2/3 cup unsweetened applesauce
2 teaspoons pure vanilla extract
½ cup almond flour
¼ cup tapioca starch
1 cup + 2 tablespoons coconut sugar (lower glycemic than white sugar)
¾ cup unsweetened cocoa powder
1 tablespoon baking soda
½ teaspoon salt
1 cup dark chocolate chips
2-4 tablespoons plant-based milk to desired consistency
Preheat oven to 350 degrees. Grease a 9 x 13 inch pan with coconut oil. Set aside. In a large mixing bowl, add the nut butter, applesauce and vanilla. Mix until smooth. In a medium bowl, add the almond flour, tapioca starch, coconut sugar, cocoa powder, baking soda and salt. Stir until evenly distributed. Add the dry ingredients to the wet ingredients and stir. Mix in the plant-based milk starting with 2 tablespoons. Stir well until a smooth batter is reached. If necessary, add up to 2 more tablespoons to achieve the desired consistency. (It will be thick.) Add in the chocolate chips and mix. Place the batter into the prepared pan and spread evenly. Bake for 22-25 minutes until the top is cooked but the middle is still slightly gooey. Allow the brownies to set as they cool for at least 30 minutes before cutting into them. Slice & savor every bite. Store any remaining brownies in the refrigerator for up to 5 days or in the freezer for prolonged freshness.
