Chia Pudding Popsicles
Cool off and hydrate with these innovative superfood popsicles that are loaded with antioxidants, protein, and omega fatty acids! Mix and match fruits and flavors to create a different combo each time. Summer never tasted (or felt!) so good.
*Makes approximately 10 popsicles (molds may vary)
½ cup chia seeds
2 cups plant-based milk (almond, cashew, hemp, coconut)
3 tablespoons pure maple syrup
½ teaspoon pure vanilla extract
pinch of sea salt
1 – 1½ cups sliced strawberries, sliced (or choose any fruit such as mango, peach, pineapple, kiwi, or mixed berries and add optional flavorings or fresh herbs.)
Make the chia seed pudding in advance by pouring all the ingredients except for the fruit into a bowl. Stir until well combined. Whisk a few times before placing in the refrigerator. Allow the mixture to gel for at least an hour or longer. Check for desired thickness and flavor.
Once the pudding has set, fill popsicle molds with layers of fruit and chia seed pudding. Because the pudding is thick, the sticks can be inserted immediately and placed in the freezer. Freeze for at least 4 hours. To unfreeze the popsicles, place the molds in hot water for about 10 seconds. Enjoy immediately!
