Berry Green Matcha Smoothie Bowl
A match(a) made in heaven! Greens and berries combine for the ultimate colorful + nutrient-dense mix of beauty foods to make you FEEL good, too! Add in a serving of matcha green tea for an antioxidant-rich, mood-boosting source of L-theanine to provide long lasting energy that also calms the mind and relaxes the body!
* Serves 2 (divide ingredients in half for a single serving)
1 cup plant-based milk (start with a cup and add more liquid as necessary)
2 cups loosely packed spinach leaves (or any combination of greens)
½ cup cauliflower, pre-steamed and frozen (optional for added nutrients + creaminess)
2 teaspoons matcha green tea powder
1 tablespoon hemp seeds
1 teaspoon vanilla
2 large bananas, sliced & frozen
1-2 pitted Medjool dates (optional for added sweetness)
Pinch of sea salt
OPTIONAL: 1 scoop of plant-based protein or collagen
For the purple half: 1 cup frozen blueberries + additional nut milk
Topping choices: hemp seeds, granola, fresh blueberries, bee pollen, shredded coconut, mint leaves
Combine the nut milk and leafy greens in a high-speed blender and blend until smooth. Add in the matcha and avocado and blend again. Once smooth, toss in the remaining ingredients except the blueberries. Blend until silky smooth adding nut milk as necessary but keeping the smoothie extra thick. Next, pour half of the mixture evenly divided into two bowls or mason jars. (Leave the other half in the blender.) With the remaining green smoothie in the blender, add the frozen blueberries and additional nut milk. Blend until the entire smoothie turns creamy and purple. Fill the bowls or jars with the colorful mixture. Top with nutritional boosts of choice. Dig in!
NOTE: place the bowls in the freezer when blending the berry portion or for an easier layered smoothie, use mason jars.
